Vegan Banana Bread
Do you want to prepare something healthy and tasty for your breakfast or that of your family? This Vegan Banana Bread is the answer!

- anti-food waste (it’s a way to re-use bananas that are too ripe that they would otherwise end up in the rubbish)
Banana Bread can be baked in the oven or in the bread machine.
3 medium sized bananas
5 tablespoons of agave syrup (or honey if you are not vegan)
200 ml of soy milk
80 ml of seed oil (I used sunflower oil)
80 g cashews (I used salty ones because I like sweet / salty contrast)
500 g of wholemeal flour
15 g baking powder for cakes
If you want to make the Vegan Banana Bread, first you need to cut the bananas in rounders and make them mushy (you can crush it with the fork or using the potato masher – this last method is faster)
Then add the honey to the mashed bananas and mix, pour the soy milk and the oil, the sifted flour with the baking powder, finally the cashew nuts.
If you are using the bread machine, just run step 1), then pour all the ingredients into the bread machine and use the “Cake” function that will knead and bake. Otherwise, Banana Bread can be bake at 160 ° or in the bread machine (option Cooking 1 hour).
Banana Bread can be eaten alone, in slices or can be enjoyed with a little jam spread over.
